Baked Parmesan Yellow Squash

Baked Parmesan Yellow Squash is an easy and delicious squash recipe with just a handful of ingredients.
This is the time of year when squash is in abundance. I recently picked up a box of zucchini and yellow squash so I’ve been looking for recipes that use them both.
One of my favorites is zucchini bread. You can add so many different fruits to this bread and it is delicious. I’ve also used yellow squash in place of the zucchini and it works just as well.
However, I’ve been looking at more savory recipes. I have a hard time coming up with side dishes and vegetable recipes so I need more of them.
This Baked Parmesan Yellow squash dish is a super easy to make recipe with just a few ingredients. It’s perfect for busy nights because it takes about 5 minutes to prep and the rest of the time is just the baking time.
Ingredients:
- yellow squash
- olive oil
- salt
- black pepper
- garlic powder
- Parmesan Cheese, shredded
To Make the Squash: Preheat the oven to 425 degrees. Slice the squash into 1/4 inch pieces and arrange on a baking sheet. Drizzle the squash with olive oil then sprinkle with salt, pepper, and garlic. Spread Parmesan cheese on top of the squash then bake for 15-20 minutes.
The thing I love about this recipe is how easy it is. You can simply cut the squash, toss it with the other ingredients, and bake it in the oven.
Since it needs to bake for 20 minutes I was able to get most of my meal finished in that time. It’s so nice not to have to watch the side dish while it’s baking. This is totally a make it and forget it recipe.
Can I use zucchini instead of squash?
Yes! Zucchini and squash are very similar so you can either use zucchini n place of the squash or do half yellow squash and half zucchini.
Can I make this in my Air Fryer?
You can. However, since all Air Fryers are different you need to watch it. I put mine on my baking tray which I covered with foil. Then I air fried it at 385 degrees for 12-14 minutes. Like I said, make sure you keep an eye on it though so the cheese doesn’t burn. If it’s getting brown too quickly dial it down to 365 degrees.
Can I use a different cheese?
You need to be careful with this one. Parmesan is a hard cheese so while it melts it doesn’t go all over the place when it melts. You can use another hard cheese like Asiago or Pecorino Romano but I wouldn’t use a softer cheese in this recipe.
I liked the look of this squash as soon as it came out of the oven. It looked soft but with the crisp cheese on top. I was excited to try it.
The first bite was really good. The squash flavor is pretty mellow while the Parmesan has a nice bite to it. I could taste the salt, pepper, and garlic as well.
It was a really simple side dish to make but we liked the flavor of it. It’s an easy way to serve vegetables with a weeknight meal and I’ve already made it again several times since I first made it.

Baked Parmesan Yellow Squash
Ingredients
- 2-3 medium sized squash
- 1 Tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1/3 c. fresh grated Parmesan cheese
Instructions
- Preheat the oven to 425 degrees. Spray a baking sheet with cooking spray.
- Slice the squash into 1/4 inch slices. Toss them with the olive oil and arrange on the baking sheet so they are touching but don't overlap.
- Sprinkle the squash with the salt, garlic powder, and pepper. Spread Parmesan cheese on top of each squash round.
- Bake for 15-20 minutes.ย
