I am not a huge breakfast eater.   It’s just not my thing.  However, in the last five or six years I’ve found that I need more than just a cup of coffee in the morning to get me to lunchtime.

Smoothies are a great way to get some fuel without having to eat anything.   I like that I can add whatever I have in the fruit bowl and have a great breakfast beverage.

What is a smoothie?

A smoothie is a cold beverage that is made by combining fruits and vegetables in a blender and mixing until thick and smooth.  Often milk, juice, or yogurt is added to the beverage.

I decided to make a blueberry banana smoothie because I had both of those ingredients on hand and I needed to use up the bananas.   The first thing you need to do is freeze the bananas.

Ingredients:

  • bananas (you can use almost ripe, fully ripe, or even overripe bananas)
  • blueberries (fresh or frozen)
  • Greek yogurt (I like using vanilla flavored because it adds flavor)
  • milk (you can use cows milk or plant based)
  • vanilla extract (optional)

Smoothies are simple to make and as long as you freeze the bananas ahead of time they only take about five minutes to make.  I like to throw all the ingredients in my Magic Bullet and whip it up so that I can just put a lid on it and go.

Simply throw everything into a blender and blend until smooth.   If your smoothie is too thick add a little extra milk to it.  If your smoothie is too thin add some ice or more frozen banana and blend again.

Can I use different fruit?

You can use practically any combination of fruit in this smoothie.   Keep the frozen banana and then substitute the amount of blueberries for strawberries, blackberries, raspberries, oranges, or cherries.

Can I make these and drink them later?

You can make these ahead of time.   Once you have blended them add them to a freezer bag or a mason jar with a lid and place in the freezer for up to 1 month.  Then when you are ready to drink it put it in the blender with 1/4 cup of milk and blend until smooth.  If it’s too thick you may need to thaw it on the kitchen counter for 20 minutes before blending.

Can I add extra things to the smoothie?

You can add up to a half cup of granola, chocolate chips, nuts, or dried fruit.   You can also add in a cup of raw spinach leaves to give the smoothie added nutrients.

Smoothies are great for people (like me!) that either need a grab and go breakfast or don’t really like breakfast food.  They are easy to customize with your favorite fruits and vegetables.

This smoothie can also be made and then taken on the go if you need a healthy and hearty breakfast.  Simply place it in a cup with a lid and drink it in the car.
