There aren’t many foods that are naturally blue.  I can probably count on one hand how many foods are blue in nature.  One of those foods is butterfly pea flower.

Several years ago I bought a container of butterfly pea flower extract to help color a few beverages I wanted to make.   It didn’t have a ton of flavor so the drinks mostly tasted like whatever the other ingredients were.

That’s not the case with butterfly pea flower tea.   I’ll be honest, it’s not the most flavorful tea in the world.  It’s very earthy and woodsy.  Adding in the sweetened milk does give it a better flavor and sweetens it up.

Ingredients:

  • ice
  • water
  • half & half
  • butterfly pea flower tea bags
  • sweetened condensed milk
  • vanilla

To make the tea latte boil the water and add the pea flower tea bags for 10 minutes.  Remove tea bags and let cool.

Combine the half & half with the sweetened condensed milk and vanilla and mix well.  Pour the cooled tea into two glasses over ice.

Slowly pour the sweetened milk mixture into the tea to create a swirl.   Stir before drinking.

Adding the milk to the blue tea creates a gorgeous white swirl that is completely stunning.  While it’s not my favorite iced tea latte, it’s certainly the prettiest one I make.

Is there a way to make this taste better?

You can add one green tea bag along with the 2 butterfly pea tea bags.  It gives it more of a tea flavor but the blue won’t be as bright.

Is there any caffeine in this?

No there’s not.  The butter pea flower is an herbal tea which is naturally decaffeinated.

Can I use dried butterfly pea flowers?

You can!  Simply put 2 teaspoons of the dried flowers into the boiling water to make the tea.

Can I use milk instead of half & half?

Yes but make sure you are using whole milk and the swirls won’t be as pretty as you get with the half & half.

As I said before, the tea itself is very earthy and while the sweetness of the milk, sometimes you might need a little more.   If this isn’t your cup of tea (ha, ha) feel free to either add a black tea bag to the mixture (which will result in a blue that isn’t as bright) or add in some lemonade to make it more of an Arnold Palmer.

If you want to serve this at a party I suggest you make the tea ahead of time and place it in a pitcher in the refrigerator.  You can also make the sweetened milk the night before and place it in a small creamer or mini pitcher.

When ready to serve pour the tea into glasses over top of ice.   Slowly pour the sweetened milk into each glass and serve immediately with a straw for stirring.

  1. Love the color of your tea. Agree that the flavor of pea flower is not great, but it imparts a beautiful blue color. I love lemonade with it.

  2. I am so curious by your tea! It sounds so interesting to work with. I will be heading to TJ Max in the morning!
