Copycat Starbucks Pumpkin Bread

Move over pumpkin spice latte, this Copycat Starbucks Pumpkin Bread is the real fall favorite! Moist, perfectly spiced, and topped with crunchy pumpkin seeds, it’s your favorite coffee shop treat made right at home.

It’s pumpkin season! The air is getting chilly, the leaves are turning colors, and pumpkin and spices are in drinks, food, and desserts.
While I love a good Pumpkin Spice Latte, I’m definitely more about putting my pumpkin into my food. One of my new favorites are Pumpkin Cookies with Brown Butter Frosting. For dinner you can’t beat Ravioli with Pumpkin Vodka Sauce. Plus I really like making Pumpkin Spice Creamer for all my coffee drinks.
Recently I’ve been on a quick bread kick. I love that I can make a loaf of bread in an hour. Plus you can make sweet or savory breads or choose a variety of add ins!
What is a quick bread?
A quick bread is a type of bread that’s made without yeast. Instead, it uses baking powder or baking soda. That means there’s no kneading or rising time needed, which makes these breads “quick” to prepare and bake.
Pumpkin bread is one of my favorite breads because of all the delicious spices. It can be eaten for breakfast, a snack, or even dessert.
One of my favorite pumpkin bread recipes is from Starbucks. It has a big, bold pumpkin flavor from the pumpkin puree.
What is pumpkin puree?
Pumpkin purée is cooked and mashed pumpkin that’s been blended into a smooth, thick consistency. Make sure you buy pumpkin puree and not pumpkin pie filling.
I really like the pepitas chopped and on the top of the bread. There’s also different spices in the bread then traditional pumpkin bread which I really appreciate.
Ingredients:
- granulated sugar
- light brown sugar (or you can use dark brown sugar if you prefer)
- vegetable oil (or you can use butter if you prefer)
- eggs
- pumpkin puree
- water
- all purpose flour
- baking soda
- salt
- ground cloves
- pumpkin pie spice
- pepitas (or toasted pumpkin seeds)
To make the bread preheat the oven to 350 degrees. In a large bowl combine the sugar, brown sugar, vegetable oil, eggs, and pumpkin puree. Add the water and mix well.
In another bowl combine the flour, baking soda, salt, cloves, pumpkin pie spice, and nutmeg. Add the dry ingredients to the wet ingredients and mix until just combined. Pour into a greased loaf pan and top with chopped pepitas or pumpkin seeds. Bake for 1 hour.
How do you make pumpkin pie spice?
If you don’t have pumpkin pie spice you can make your own. Combine 3 tablespoons of cinnamon, 2 teaspoons of ground ginger, 2 teaspoons of ground nutmeg, 1 1/2 teaspoons of allspice, and 1 teaspoon of ground cloves. Mix together. If you don’t have all of these ingredients make sure you combine the cinnamon, nutmeg, and allspice together. Add ginger and cloves gives additional flavor but they are needed.
This bread was delicious! It’s pretty much everything you want in a fall pumpkin bread. The bread itself is orange and very pumpkin forward.
There are plenty of spices in this bread. The addition of more cloves really adds to the spice mixture. Then the crunch of the pumpkin seeds on top is perfection.
Can I add a glaze on top?
You could certainly add a powdered sugar glaze or a light chocolate glaze on top of the bread but it definitely isn’t needed.
This pumpkin bread is great served for breakfast with a cup of coffee or as dessert with a cold glass of milk.

Ingredients
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 3/4 cup pumpkin puree
- 1/3 cup water
- 1 3/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 teaspoon ground cloves
- 1 teaspoon cinnamon
- 3 Tablespoons pepitas chopped
Instructions
- Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray.
- In a large bowl mix together the sugar, brown sugar, vegetable oil, eggs, and pumpkin puree. Mix well.
- In another bowl combine the flour, baking soda, salt, cloves, pumpkin pie spice, and cinnamon.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Pour the batter into the prepared pan.
- Sprinkle the chopped pepitas over top of the batter.
- Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
