Dulce de Leche Rice Krispies Treats

Take your Rice Krispies Treats to a whole new level with a layer of sweet Ducle de Leche then a layer of chocolate on top.

I really love Rice Krispies Treats.  They are one of those desserts that are super easy to make and taste so good.  While the store bought ones are ok, I prefer to make them myself.

I try to keep a box of Rice Krispies in the house just for this reason.  You never know when you’ll have a sweet tooth craving and need to make something.  Since these require no oven and only 15 minutes to make, Rice Krispies Treats are always high on my list of treats.

Through out the years I’ve made many different versions of these treats.  I like to add to them to make them something a little special but still keep them easy to make.  These Dulce de Leche Rice Krispies Treats take an extra couple of minutes but are totally worth the time!

Ingredients:

  • butter (I like using salted butter with this recipe)
  • mini marshmallows (you can also use regular sized)
  • Rice Krispies
  • Dulce de Leche (see my notes on how to make your own!)
  • chocolate (you can use a bar of chocolate, candy melts, or chocolate chips)

To Make the Rice Krispies Treats:  Heat the butter and marshmallows in a pan over medium heat.  Once they have melted remove from heat and add in the Rice Krispies. Mix well.  Pour into the prepared pan and let sit 15 minutes.   Heat the Dulce de Leche in the microwave for 30 seconds to soften it up and pour over top of the treats.  Allow to cool 5 minutes.   Melt the chocolate in 20 second intervals in the microwave.  Pour over top of the Dulce de Leche and gently spread.  Allow to harden then cut into squares.

These Rice Krispie Treats need just 2 more ingredients than the original recipe and they are so much more decant than the original.  To start I made the regular Rice Krispies Treats recipe but I used salted butter instead of unsalted.  If you don’t have salted butter add a pinch of salt.

After the treats firmed up in the pan I heated up some Dulce de Leche.   You don’t want to melt it all the way, just heat it enough so that you can pour it over top of the Rice Krispie Treats.

What is Dulce de Leche?

Dulce de Leche is Spanish for sweet milk.   It’s a caramel like sauce that’s often used in Latin American desserts.  While it has a flavor that is reminiscent of caramel, it has a creamier, milder flavor.  Dulce de Lech has a smooth, spreadable consistency that is made by simmering milk and sugar together until it is thick and golden. 

How do you make Dulce de Leche?

There are two main methods you can use to make the Dulce de Leche.  The first recipe for Dulce de Leche is using a water bath in the oven.  Heat the oven to 425 degrees.  Pour 1 (14 ounce) can of sweetened condensed milk into a pie plate and cover with foil.   Put the pie pan in a roasting pan and add enough water to reach halfway up the pie pan.  Bake for 45 minutes then check to make sure the water level is the same, add more if needed.  Bake for an additional 30-45 minutes or until the milk is thick and golden in color.  Remove from oven and cool. 

The other method is a stove top method.  Remove the label from a 14 ounce can of sweetened condensed milk.   Place in a large pot and cover with water making sure there is 2-3 inches of water above the can.  Bring the water in the pot to a boil.  Boil the can for 3 and a half hours, checking every 30 minutes to make sure the can is still covered with water.   Remove from heat and cool completely before opening.

How do you store the Rice Krispies Treats?

I usually just keep them in the pan and cover them with foil.  Then I cut squares as we eat them.   They will stay fresh this way up to 4 or 5 days.   You can also cut the treats into squares and place in an air tight container.  This way will allow them to stay fresh for up to 7 days.

Once the Dulce de Leche sets then you can heat up your chocolate.   I usually put mine in the microwave and heat it in 20 second intervals, stirring after each interval, until it is melted.  

You can also heat your chocolate in a double boiler.   Place a metal bowl over top of a pot with a few inches of water in it.  Bring the water to a simmer and add the chocolate to the bowl on top.  Mix until it is melted.

More Rice Krispies Treats Recipes:

Pour the melted chocolate over top of the Dulce de Leche and gently smooth the top.  You have to be gently when you do this so that the chocolate doesn’t mix into the Dulce de Leche.

Once the chocolate has set it’s time to eat them.   I love the flavor of these treats.  The Rice Krispy Treats combined with the sweet toffee flavor of the Dulce de Leche and the rich chocolate on top is out of this world!

No one will believe how easy these are to make.   They also travel well so make a batch, load them up, and take them to a dinner party or gathering.

Dulce de Leche Rice Krispies Treats

Ingredients

  • 3 Tablespoons butter
  • 10 oz. marshmallows
  • 6 cups Rice Krispies
  • 1 can 13.4 oz Dulce de Leche
  • 4 oz. chocolate

Instructions

  • Heat the butter and marshmallows in a large saucepan over medium heat.
  • Once melted remove from heat and stir in the Rice Krispies.
  • Press into a 13 x 9 baking dish coated with cooking spray. Allow to sit for 10-15 minutes.
  • Pour the Dulce de Leche into a microwave safe bowl and heat in the microwave for 30 seconds. Stir well and pour over top of the Rice Krispies Treats. Smooth in an even layer and let cool 5-10 minutes.
  • Put the chocolate in a microwave safe bowl and heat in 20 ssecond intervals in the microwave, stirring after each heating, until completely melted. Pour over top of the Dulce de Leche and gently smooth in an even layer.
  • Allow to harden 15 minutes. Cut in 18 squares.
