Who needs an ice cream maker when you can whip up this delicious No Churn Caramel Brownie Ice Cream? Rich, fudgy brownie bites, swirls of sweet caramel, and creamy homemade ice cream come together for the ultimate frozen dessert. Grab a spoon because this irresistible treat won’t last long!

I don’t know where you live but in our area it’s been in the upper 90’s all week long which isn’t typical for where we live. While we do have hot summers, they generally aren’t reaching for 100 degrees multiple days in a row.Â
One of our favorites is this fun Mermaid Milkshake served with different types of candy. We really enjoy combining breakfast with dessert with these Waffle Ice Cream Sandwiches. also make a lot of no churn ice cream like this No Churn Blueberry Ice Cream and No Churn Lemon Shortbread Ice Cream.Â
I had both heavy cream and sweetened condensed milk opened in the refrigerator from other recipes I made so I knew I wanted to make a new flavor of no churn ice cream. The only decision I had to make was what flavor I wanted to try.Â
What is no churn ice cream?
No churn ice cream is homemade ice cream that’s made without an ice cream maker. Instead of relying on a machine to churn air into the mixture while it freezes, the recipe uses a combination of fresh whipped cream and sweetened condensed milk to create a creamy and scoopable texture.
Now in order to make this recipe you will need to make brownies before making the ice cream. You can easily make a box mix of brownies or you can make your own. My favorite brownie recipe is Duff’s “The Brownie”.Â
The brownies can be made up to two days ahead of time. Simply make a pan of brownies then cut into small 1 inch pieces. You want about 2 cups of brownie bits.Â
You can also make your own caramel sauce but I chose just to buy caramel sauce to make this recipe easier on me.  Just a decent caramel sauce you would use for an ice cream topping will work fine.Â
The base of this ice cream is heavy cream and sweetened condensed milk. You cannot use whipped cream in a can or Cool Whip as it will not set up. You must use heavy cream.Â
Why do you use heavy whipping cream in no churn ice cream?
Heavy whipping cream is one of the main ingredients in no churn ice cream because it does the job that an ice cream machine normally would. When you whip it, it traps millions of tiny air bubbles that make the finished ice cream light, creamy, and scoopable. It has a high fat content so it helps provide structure for the ice cream. Â
Ingredients:
- heavy whipping cream
- sweetened condensed milk
- vanilla extract
- brownies (either homemade or store bought)
- caramel sauce
- salt (optional)
To make the ice cream you simply beat the heavy whipping cream until stiff peaks form then fold in the sweetened condensed milk and vanilla extract.  Gently fold in the brownie pieces, caramel sauce, and salt.  Spread in a pan and freeze. That’s it!
This ice cream is amazing! It’s rich and creamy with a nice vanilla base. The brownies stayed soft and added a nice pop of chocolate to the mix. The caramel and salt add a punch of flavor as well. Â
How do you keep the brownies soft in the ice cream?
The best thing to do is slightly under bake the brownies or use brownies from the center so that they stay softer. I found that if I use the corner pieces or the really firm pieces sometimes they get too hard in the ice cream.Â
This ice cream is delicious on it’s own but you can also serve it with additional caramel sauce or a drizzle of chocolate syrup.  It’s also great on top of a brownie or in the middle of a chocolate chip cookie ice cream sandwich.Â
Kids and adults will both love this rich and tasty frozen treat. Plus you can make it in advance for summer gatherings, pool parties, or just for a summer treat.Â
How do you store no churn ice cream?
Store the ice cream in an air tight container or keep in the container you froze it in but cover the surface of the ice cream. It will keep in the freezer for 2-3 weeks.Â

No Churn Caramel Brownie Ice Cream

Ingredients
- 2 cups cold heavy cream
- 1 14 ounce can of sweetened condensed milk
- 1 Tablespoon vanilla extract
- 2 cups brownies cut into 1 inch pieces
- 1/2 cup caramel sauce
- 1 teaspoon salt optional
Instructions
- Place the heavy cream in a large bowl that has been chilled.
- Use a hand mixer and mix on medium high speed for 3-5 minutes or until stiff peaks forms.
- Add the sweetened condensed milk and vanilla to the whipped cream mixture and gently fold to combine.
- Add the brownies bites, half of the caramel sauce, and the salt and gently mix to combine.
- Pour the mixture into a loaf pan or other pan that can be frozen.
- Drizzle the top with the remaining caramel sauce.
- Freeze for at least 3 hours before serving.
