Pandan Cool Whip Cookies

Soft, fluffy, and totally irresistible! These pandan Cool Whip cookies are light as air with a sweet vanilla coconut flavor and that gorgeous natural green color.

It’s no secret that when I’m working on my blog or trying to relax after a crazy day I like to watch cooking or baking shows on TV.   It helps me keep up to date on all the new fads of baking and the amazing traditional sweets as well. 

Recently one of the ingredients that has been on all the baking shows has been pandan.  I’ll be the first to admit that I had no idea what pandan was so I started on the hunt to find someone who was baking locally with pandan. 

What is pandan?

Pandan is a tropical plant used for flavoring desserts and drinks.It is slightly sweet with flavors of vanilla and coconut with just a hint of nuttiness. It has a gorgeous light green color to it. 

The joke was on me as I live in a small, rural town and no one (except my fellow baking show lover) has even heard of pandan, let alone seen a baked good with it in our entire county.  

I found some pandan extract and ordered it to use in my baked goods.  I wanted to make cookies because I knew cookies would be easy and they are such a blank slate that whatever flavor you put into them you are going to taste.

Normally I would go for my plain cookie dough that I use with a variety of mix ins but I recently made Cool Whip Cookies that were really good and I knew I had another container of Cool Whip in the freezer. 

Cool whip cookies start with a boxed cake mix.  I have made several cake mix cookies.  Funfetti Cake Mix Cookies are easy to make and you can add all the extra sprinkles that you want.  Chocolate Cake Mix Cookies are tasty and I like to add chocolate chips or M&M’s to the batter. I’ve even made Cake Mix Biscotti. 

What are cool whip cookies?

Cool Whip cookies are cookies that are made with Cool Whip, a box of cake mix, and eggs.  Then you can add extracts, chocolate chips, or other flavored chips to give the cookies additional flavors or textures.  These cookies are super soft, slightly chewy, and a little cake like.

I love that these cookies are simply made with Cool whip, cake mix, and eggs.  You can use either a white or yellow boxed cake mix and then use extract and chips to flavor it. 

I used the pandan extract which made the cookies a lovely light green shade and gave them vanilla and coconut flavor with a hint of nuttiness and butter.   I thought chips might be a nice addition so I added in white chocolate chips for color and sweetness. 

Do I have to add the white chocolate chips?

You do not have to add the white chocolate chips to these cookies. If you want to add another type of chip butterscotch would add a rich, sweet flavor, cinnamon would add a bit of spice to cut through the sweetness, or milk chocolate chips add a rich, dessert feeling to the cookies.

Ingredients:

  • Cool Whip (or other frozen whipped topping)
  • boxed cake mix (either white or yellow cake mix)
  • eggs
  • pandan extract
  • white chocolate chips
  • powdered sugar

Preheat the oven to 350 degrees.   In a large bowl combine the cool whip, boxed cake mix, and eggs.  Stir well.  Add in the pandan extract and chocolate chips and mix until combined.

Put the powdered sugar in a small bowl.  Use a small, 1 Tablespoon cookie scoop and scoop out the dough.  Roll it into the powdered sugar and place on a baking sheet 2 inches apart. Bake for 10 minutes. Remove from oven, let cool one minute, then remove to a wire cooling rack to cool completely. 

These cookies were had a strong, sweet scent and a surprisingly rich flavor.    The light green color with the white chocolate chips was perfect for the spring.

The pandan cookie was light and fluffy and melted in my mouth.  I could actually smell it before I tasted it.  It tasted lightly of vanilla and coconut, then had a buttery finish with just a hint of nuttiness.  The white chocolate chips added a bit of sweetness.  I was pleasantly surprised by the flavors. 

How do you store the Pandan cookies?

Store the cookies in an air tight container at room temperature for up to 4 days.  You can also freeze them in a freezer bag in the freezer for up to 3 months.

Pandan Cool Whip Cookies

Ingredients

  • 1 box 15.25 oz white or yellow cake mix
  • 2 cups Cool Whip thawed
  • 1 egg
  • 2 teaspoons pandan extract
  • 1 cup white chocolate chips
  • 1/2 cup powdered sugar

Instructions

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl combine the cake mix, Cool whip, egg, and pandan extract. Mix well.
  • Fold in the white chocolate chips.
  • Place the powdered sugar in a small bowl.
  • Using a 2 tablespoon cookie scoop scoop the dough into balls and roll in powdered sugar. Place 2 inches apart on the cookie sheet.
  • Bake for 8-10 minutes.
  • Remove from oven and cool for 2 minutes before transferring them to a wire cooling rack.
