Bird’s Nest Rice Krispies Treats

Sweet, crunchy, and almost too cute to eat these Bird’s Nest Rice Krispies Treats are the perfect no bake Easter treat! Rice Krispies Treats are shaped into little nests, then topped with shredded coconut, chocolate candy eggs, and an adorable PEEPS chick on top.

I’ve been back on my dessert kick lately.  Every weekend I make and sample several holiday treats.   This week I’ve been working on my Easter sweets.

While normally my treats are fairly intricate and take over an hour to make, I’ve been trying to make more adorable but easy desserts in recent weeks.  This one is no exception.

With Easter only days away if you are looking for something special to serve for dessert but you don’t have a lot of time, I’ve got the dessert for you!  Bird’s Nest Rice Krispies Treats are fun, fast, and perfect for Easter. 

What are Rice Krispie Treats?

Rice Krispies Treats are a classic no bake dessert made from Rice Krispies cereal, melted marshmallows, and butter.   Everything is mixed together, pressed into a pan, then cut into squares.

I’ve made a lot of different Rice Krispies Treats over the years. One of the tastiest ones I’ve made is Dulce de Leche Rice Krispies Treats.  My favorite holiday treats are Grinch Rice Krispies Treats. I’ve also made these fun Frankenstein Rice Krispies Treats

This version make Rice Krispies Treats in a muffin tin and presses an indentation in the center which creates a nest.   The nest is then filled with green colored shredded coconut. 

Chocolate candy eggs and a PEEPS chick are put on top to finish the treat.  This no bake dessert take less then 15 minutes to make and put together yet they are super adorable!

Can I use something else for the Bird’s Eggs?

Sure!  If you don’t have any candy coated chocolate eggs there are other candies you can use instead.  Speckled jelly beans would work well as the eggs in these nests. Robin Egg malted milk candies would work too.

I actually ended up using several different bags of marshmallows that I had laying around.  I had half a bag of mini marshmallows and about a cup of Easter Bunny Mallows .  I put both in the pan and even though one bag was colored marshmallows it didn’t affect the end product at all.

Ingredients:

  • sweetened, shredded coconut flakes
  • green food coloring
  • salted butter (or unsalted if you prefer)
  • mini marshmallows
  • Rice Krispies cereal (or other crispy rice cereal)
  • candy covered chocolate eggs
  • PEEPS chicks

Before starting place the coconut in a small baggie and add a few drops of food coloring.  Shake the bag to color the coconut.  Meanwhile, spray a muffin tin with cooking spray and set aside.

In a large saucepan melt the butter over medium high heat.  Add in the marshmallows and stir until melted.  Remove from heat and add in the Rice Krispies cereal, stirring until combined.  Quickly place the Rice Krispies mixture into the muffin tin cups.  Spray a tablespoon with cooking spray and press a dent into the middle of each cup forming the Bird’s nest.  Allow the mixture to cool to room temperature then pop out the cereal bird’s nests.

Once the nests are made, kids can help assemble then by putting in the coconut “grass”, the chocolate eggs, and placing the Peeps on top.  It’s a fun Easter activity for them while you are trying to get Easter dinner cooked and the kids will love them!

These edible bird’s nests are adorable!  They would be great to use as part of a place setting at Easter, to give as a little holiday gift, or to put on a dessert table.

How do you store the rice krispie treat nests?

These are best stored in an air tight container at room temperature for up to 2 weeks.  While you can stack them, using a flatter container is better because it’s hard to stack on top of the marshmallow chicks.

Peeps Nest Rice Krispies Treats

Ingredients

  • 1/2 c. sweetened coconut flakes
  • 2 drops green food coloring
  • 3 Tablespoons butter
  • 2 cups mini marshmallows
  • 4 cups Rice Krispies cereal
  • 1 cup candy covered chocolate eggs
  • 12 Peeps

Instructions

  • Place the coconut and green food coloring in a zip top bag. Zip closed and shake to color the coconut green. Set aside.
  • Spray a muffin tin with cooking spray. Set aside.
  • Heat the butter in a large saucepan over medium heat. Add in the marshmallows, stirring constantly, until they have melted.
  • Remove from heat and stir in the Rice Krispies. Quickly place a spoonful of the mixture into each of 12 muffin cups.
  • Spray the back of a tablespoon with cooking spray and quickly press in the middle of each Rice Krispies treat to form the nests. Allow to cool for 10 minutes.
  • Remove the nests from the muffin tin. Sprinkle the coconut in the center of each nest, place 3 chocolate eggs in the nest, and put a Peeps on top.
