Pierogi and Kielbasa Bake

Recently I’ve seen a lot of different recipes for pierogi bakes.  Since pierogies are one of my favorite foods I was excited to try a few of them.

Fun fact:   When I was growing up my Aunt Kaye always made us homemade pierogies to take home from her house.  Once she passed away my dad took over and now he makes the world’s best pierogies.

What is a pierogi?

Pierogies are a type of filled dumpling that originated from Central and Eastern European cuisines, particularly from Poland and Ukraine. They are made by wrapping dough around a savory or sweet filling and then boiling, and often frying, them.  The classic filling is cheese and potatoes but pierogi can also be filled with meat, spinach, sauerkraut, fruit, or jam.

My father’s family is Eastern European so pierogies were something we always ate.  I am also from Pittsburgh and they are a big tradition in Pittsburgh.

Pierogies are so popular in Pittsburgh that there are actual “pierogi” races at the Pittsburgh Pirate games. Yes, grown adults put on pierogi costumes and race each other at the baseball games-it’s hilarious!

When I originally made this recipe back in 2011 I made it with frozen pierogies.  I would recommend you go with the classic cheese and potato filling or another similar savory filling.

However, we now always use my dad’s Homemade Pierogies because they are just so much better in this recipe.  I’ve also use my Homemade Pierogies stuffed with cheese, bacon, and caramelized onions.

What equipment do I need to make Pierogies?

You will need a potato masher to make the potato filling for the pierogies.  When making the pasta you will need a pasta roller.  You can get a hand crank pasta machine (or pasta roller).   This is great for people that like low tech equipment and it works well.  I use a pasta attachment for my Kitchen-Aid mixer because it’s always on my counter and it’s easy for me to use the attachments.  You can also buy an electric pasta maker if you want a machine to do the hard work for you.

I decided to make this pierogi bake because it has a protein and vegetables in it so really it’s a whole meal in one dish.   I usually serve it with a salad and call it dinner.

The protein in the bake is kielbasa.   I like to use turkey kielbasa because it’s lower in fat than traditional kielbasa.  However, you could add in chicken or shrimp and it would be delicious as well.

Ingredients:

  • frozen potato and cheese pierogies
  • kielbasa (regular or turkey)
  • garlic cloves
  • bell peppers (one color or two different colors)
  • onions
  • cream cheese (low fat or full fat)
  • white wine (or you can also substitute more chicken broth)
  • cheddar cheese
  • mozzarella cheese
  • black pepper

To make this dish you will need to preheat the oven to 400 degrees and spray a 9 x 13 baking dish with cooking spray.  Lay the frozen pierogies in the bottom of the dish and set aside.

Place the kielbasa in a large skillet over medium heat.   Cook for 4 minutes per side or until browned.   Add in the garlic, peppers, and onions and saute for 3-4 minutes.

Stir in the cream cheese and black pepper and cook for 1-2 minutes or until the cream cheese starts melting.  Add in the wine and chicken broth, stirring frequently until all ingredients are well incorporated.

Pour the sauce, vegetables, and kielbasa mixture over top of the pierogies in the baking dish.  Sprinkle the top with the two types of cheeses.  Bake for 20 minutes.

What can I serve with Pierogi and Kielbasa Bake?

A good side dish is a simple green salad.   We’ve also made roasted vegetables on the side.  Corn on the cobb in another good side dish.  If you are looking for more of a carb then rolls are a good choice because you can use them to gather up the extra sauce from the bake.

This pierogi bake turned out really good.   The base of pierogies is topped with the kielbasa, veggies, and cheese sauce.  The cheese sauce is simple but packs a lot of flavor.

How do you store Pierogi bake?

If you have any leftovers simply store them in an air tight container in the refrigerator for up to 3 days.   Reheat in the microwave or the oven.

I liked that the hands on time with this dish is about 15 minutes and it’s ready in 30 minutes.  It makes a nice and easy weeknight meal.

Pierogi and Kielbasa Bake

Ingredients

  • 1 package 16 oz. of frozen potato and cheese pierogies
  • 12 oz. kielbasa sliced into 1/2 inch pieces
  • 2 garlic cloves minced
  • 1/2 green bell pepper julienned
  • 1/2 red bell pepper julienned
  • 1/2 medium onion thinly sliced
  • 4 oz. cream cheese
  • ½ c. white wine or substitute chicken broth
  • ¼ c. chicken broth
  • ¼ c. cheddar cheese shredded
  • ¼ c. mozzarella cheese shredded
  • 1 teaspoon black pepper

Instructions

  • Preheat the oven to 400 degrees.
  • Spray a 9 x 13 baking dish with cooking spray. Arrange the pierogies in the bottom of the dish. Set aside.
  • Place the kielbasa in a skillet over medium heat, cooking for 4 minutes per side or until it begins to brown. Add in the garlic, peppers, and onions and saute for 2-3 minutes.
  • Stir in the cream cheese and black pepper and cook for 1-2 minutes or until the cream cheese starts melting.
  • Stir in the wine and chicken broth, stirring frequently, until all ingredients are well incorporated.
  • Remove the pan from heat and pour over the pierogies in the prepared baking dish. Top with the cheeses.
  • Bake for 15 minutes or until cheese is melted and everything is heated through.
