Prickly Pear Margaritas

A bright pink Prickly Pear Margarita is sweet and tart with flavors of melon, lime, and bubblegum.  It’s a super fun tequila cocktail!

I’ve been a roll with Prickly Pear recipes lately.  I received a case of them and I just went to town making as many things as I could because I can’t get them in stores near me.

What is a prickly pear?

A prickly pear can also be called a cactus fruit because they grow on cacti.  Prickly pears come in a wide variety of colors but the most common are the pink or purple color when getting drinks or cocktails with the syrup.

Last week I made prickly pear syrup so I’ve been looking for ways to use it.  One way to use it up is to make fun and pretty cocktails!

Do I have to make my own prickly pear syrup?

No you don’t have to but if you do you’ll have plenty left over for even more cocktails!   If you don’t want to make it try buying this syrup.

Since I love a good margarita I thought it would be fun to make a bright pink prickly pear margarita.  The sweetness of the pears balanced with the tartness of the lime sounds like a perfect pairing.

Ingredients:

  • tequila
  • triple sec
  • a lime
  • prickly pear syrup (find my recipe HERE)
  • sparkling water
  • coarse salt

To Make the Margarita:  In a cocktail shaker combine the tequila, triple sec, juice of one lime, and prickly pear syrup.  Shake for 30 seconds then strain into prepared glass.   Top with sparkling water.   Garnish with a slice of lime and a slice of prickly pear.

This margarita is really easy to make.  If you are using store bought prickly pear syrup it’s even easier to make and will only take you about five minutes.

I made my own syrup which takes a bit of time but I made it a week ahead of time so I had all the ingredients ready to go.  Pretty much you put everything in a shaker, shake, and pour into a margarita glass rimmed with salt.

What does a prickly pear taste like?

It is a juicy fruit that tastes similar to a melon.   It has a light flavor with hints of bubble gum.  It’s a unique fruit, studded with seeds, that needs to be tried.

Where can I get coarse salt?

You can get it in the spice aisle or look for it near the cocktail mixers in your market.  You can also usually get it at party supply stores or craft stores. This margarita salt makes rimming glasses simple.

I like using traditional coarse salt on the rim of this margarita to give it a sweet, salty, and tart flavor.   However, since it’s a bit sweeter you could use a coarse pink sugar to go for a sweet rim.

I thought that this margarita had a great flavor.  It was sweet and tart and a bit earthy.  The color was fabulous.  It would be perfect for a girl’s night or a birthday party.

Prickly Pear Margarita

A bright pink Prickly Pear Margarita is sweet and tart with flavors of melon, lime, and bubblegum.

Ingredients

  • 1 1/2 oz. tequila
  • 1 oz. triple sec
  • 1 oz. fresh squeezed lime juice
  • 1 oz. prickly pear syrup
  • sparkling water
  • coarse salt

Instructions

  • Rub the rim of a margarita glass with a lime wedge. Dip the rim into the coarse salt.. Fill the glass halfway with ice. Set aside.
  • Fill a cocktail shaker with ice and the tequila, triple sec, lime juice, and prickly pear syrup. Shake for 30 seconds then strain into prepared glass.
  • Top with sparkling water.
  • Garnish with a lime wedge and a slice of prickly pear.

  2. Bubblegum? That’s so fun for summer! The color is absolutely gorgeous too. Going to have to get my hands on some prickly pears.
