Watermelon Feta Salad

Watermelon Feta Salad is a light and refreshing summer dish made with juicy watermelon cubes, cool cucumber chunks, creamy feta cheese, and fresh mint leaves. The sweet and salty flavors are finished with a drizzle of olive oil and a splash of lime juice.

Nothing quite says summer like fresh summer produce.   We love going to the local farmer’s markets and picking out fruits and vegetables. 

One of our favorites is watermelon.  We’ve tried all the tips to picking a good watermelon and while they help, it’s still tricky to pick out a good one.  However, it’s worth it when you get a good one because it’s so refreshing in the summer. 

How do you choose a good watermelon?

  • Pick one with an orange or yellow spot for full flavor; leave tasteless ones with a white spot.
  • Round and heavy watermelon are sweet while elongated ones are usually watery. 
  • Dark and dull are usually ripe; shiny ones are not.
  • Large webbing is sweeter, small webbing is bland.

Since watermelon is so good on its own I haven’t made a ton of dishes with it.  I do make a refreshing Watermelon Cosmo Punch that’s perfect for enjoying at the pool or at a cook out. Occasionally we make Fruit Pizza with Watermelon Salsa too. I’ve also made Watermelon Margaritas for a girls night in. 

I’ve recently been seeing recipes for watermelon feta salad.   Since we’ve been getting a huge watermelon just about every week and we love feta I thought this sounded delicious. 

Why you will love Watermelon Feta Salad:

Watermelon feta salad is a cool and refreshing summer salad.  It’s made with juicy watermelon, fresh cucumbers, and mint leaves.  Add to that the tangy flavor of feta cheese along with a sweet and tart dressing, this salad is simple and bursting with summer flavor. 

Add to it that my dad gave us a pile of homegrown cucumbers and I had fresh mint growing in the garden and we had everything we needed to make this summer salad. 

The only thing I didn’t love was the dressing and while I used the basic idea for the dressings I saw, I went with my own sweet and tangy dressing for this salad.

Ingredients:

  • watermelon
  • cucumber
  • red onions
  • fresh mint leaves
  • feta cheese (you can use chunks or crumbles)
  • olive oil
  • fresh limes
  • red wine vinegar
  • honey
  • salt and pepper

To make the salad combine the watermelon, cucumbers, red onions, and mint leaves in a large bowl and toss to combine.  In a small bowl whisk the olive oil, lime juice, vinegar, honey, salt and pepper.  Pour over top of the salad and toss.  Sprinkle with the feta cheese. 

Do I have to add the dressing?

Honestly you don’t have too.  While it adds a lot of flavor and is really good, a drizzle of olive oil or lime juice is just as well for dressing the salad.  

This summer salad looked so fresh and inviting.  I loved the vibrant colors staring out at me from the bowl and couldn’t wait to try it. 

It’s cool and refreshing.  Both the watermelon and cucumber are perfect for summer.   The mint leaves add a cooling touch to the salad. 

The feta is tangy and pairs well with the sweetness of the watermelon.  I enjoyed lightly sweetened and slightly tart dressing that went over top of the salad.

How do I store Watermelon Feta Salad?

Honestly, this salad is best eaten the day you make it.   While you can whisk the dressing together and keep it in the refrigerator for up to one day I recommend putting the ingredients together right before serving to keep it fresh.

Ingredients

  • 4 cups seedless watermelon cut into 1 inch cubes
  • 1 cucumber peeled and diced
  • 1/4 red onion thinly sliced
  • 2 Tablespoons fresh mint leaves chopped
  • 1/4 cup feta cheese either crumbled or cubed
  • 2 Tablespoons olive oil
  • 1 Tablespoon lime juice
  • 1 Tablespoon red wine vinegar
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder optional

Instructions

  • In a large bowl combine the watermelon, cucumber, onion, and mint leaves. Toss to combine.
  • In a small bowl whisk together the olive oil, lime juice, vinegar, honey, salt, pepper, and garlic.
  • Pour the dressing over top of the watermelon in the bowl and toss to combine.
  • Sprinkle with feta cheese.
  • Serve immediately.
