Easy 5 Ingredient Chocolate Mint Cookies

St. Patrick’s Day is coming and I’ve been on the lookout for new treats!  I wanted to make it easy on myself this year so I went looking for desserts that don’t require a lot of ingredients or effort.

I knew I either wanted to make something green or something mint flavored.  Not that mint really says St. Patrick’s Day but it’s green so it makes people think of it.

What I found was these easy 5 Ingredient Chocolate Mint Cookies.   They are made with a box of chocolate cake mix.  I was a little skeptical that a cake mix could taste like cookies but I was willing to give it a shot.

Ingredients:

  • chocolate cake mix (I like to use milk chocolate but you can use Devil’s Food or dark chocolate if you’d like)
  • oil (a tasteless oil like vegetable or canola oil is best)
  • eggs
  • Andes Baking Chips (or another mint baking chip)
  • green sprinkles (you can use plain green or fancy green and gold sprinkles)

Part of the problem is that I’m not a big fan of chocolate cake.   You heard me right, I don’t really like chocolate cake.   I don’t know what it is but it’s not my thing.  Chocolate cookies or candy?   Yep, I’ll take them but chocolate cake or ice cream?  Hard pass.

These cookies are a snap to make.  They have the cake mix, oil, eggs, and Andes baking chips.   If you’ve never had Andes baking bits they are simply chopped up chocolate and mint baking pieces.  If you can’t find them at the store you can buy Andes candies and just chop them up.

So you take those ingredients and bake them in the oven.  The cookies come out hot and you sprinkles more of the Andes baking chips on top.  I waited a minute or two and then spread the candies around.  It makes an awesome chocolate mint topping on the cookies.

Can I use a different flavor cake mix?

You can honestly use any flavor you want.   You can try a vanilla mix and just add a few drops of green food coloring and just have a vanilla mint cookie that’s green.  Other flavors that work would be German chocolate, dark chocolate, or yellow cake.

Can I add anything to the cookies?

You can add the Andes baking chips to the cookies.  You could also add white or milk chocolate chips, mint chocolate chips, or green and white M&M’s if you want to mix it up.

Can you freeze these cookies?

If you want to freeze the dough the best thing to do if mix it up, roll the dough into balls, and place on a cookie sheet.  Freeze for 30 minutes.  Then place the dough balls into a freeze bag and freeze for up to 6 months.   Before baking remove from the freezer and place on a cookie sheet to defrost for 30 minutes.  Bake according to the directions, adding 2-3 minutes if they are still partially frozen.

How do you store these cookies?

Store them in an air tight container for up to 7 days.  The chocolate on top will harden so you will be able to stack them.  If you live in a warmer climate you may want to put parchment paper in between the layers in case the chocolate starts to melt.

So how do they taste?  Amazing!   They are soft, fudgy, and don’t taste like cake at all!   There is a hint of mint to them as well.   I put some green sprinkles on top to make them more St. Patrick’s Day looking and it actually gave the cookies a little bit of a crunch.

I loved these cookies and they stayed soft for up to 3 days.   They may have stayed soft longer but they were gone after 3 days.   These are the perfect cookies to bake and take somewhere because no one would ever guess they have just 5 ingredients and were made from a cake mix!

Easy 5 Ingredient Chocolate Mint Cookies

Yield: 3 dozen
Prep Time: 5 minutes
Cook Time: 12 minutes
Total Time: 17 minutes

These simple 5 ingredient cookies are soft, fudgy, and totally delicious!

Ingredients

  • 1 box chocolate cake mix
  • 1/2 c. oil
  • 2 eggs
  • 1 1/2 c. Andes Baking Bits
  • Green sprinkles

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl combine the chocolate cake mix, oil, and eggs. Mix well until combined.
  3. Mix in 1 cup of the Andes baking bits.
  4. Drop tablespoons of batter on a cookie sheet leaving 2 inches in between each cookie.
  5. Bake for 10-12 minutes or until the edges are firm.
  6. Remove from oven and place on a wire rack. Immediately sprinkle Andes Baking Bits on top of the cookies. After 1-2 minutes spread the melted bits on top of the cookies to form a frosting of sorts and sprinkle with green sprinkles.
