Easy Cake Mix Coffee Cake

This easy Cake Mix Coffee Cake is bursting with juicy mixed berries and topped with a sweet, buttery crumb topping. Perfect for breakfast, brunch, or an afternoon treat with a hot cup of coffee!

I am a big fan of sweet breakfast foods.  I like pancakes, waffles, and coffee cakes instead of bacon, eggs, and quiche.  Basically I want to have dessert with my morning coffee instead of eggs and a protein.Â
While I enjoy a sweet breakfast it isn’t always super easy to make one as they often have be baked or mixed and cooked.  One thing I’ve found to help with this is to use a short cut like using a cake mix as the base of whatever I’m baking.Â
What can you make with a cake mix?
You can make cakes, cupcakes, cookies, and brownies with a box of cake mix. Other things you can make are cobblers, dump cakes, poke cakes, and muffins.  For breakfast treats you can make cinnamon rolls, coffee cake, quick breads, or even donuts.Â

I actually have many recipes that use cake mix as a base. In the fall I love these Cake Mix Apple Spice Waffles for breakfast or a treat. Another recipe I use often is a Cake Mix Cookie recipe that can be used with a variety of different cake mixes. One of my most popular recipes is Cake Mix Biscotti.Â
I had several pints of blueberries in the refrigerator so I knew I wanted to make something with them. I decided on a Blueberry Cake Mix Coffee Cake with a crumb topping. I thought that would be easy to make and would use one of the pints of berries.Â
The base of the coffee cake is simply cake mix, Greek yogurt, eggs, butter, blackberries, and blueberries.  I used a yellow cake mix but you could use a white cake mix or even a lemon one to pair with the blueberries.Â
Can I use a different berry?
Of course! You can use strawberries, raspberries, blackberries, or even cranberries in place of the blueberries. You can also use a combination of berries to make a mixed berry coffee cake.  If you prefer a different fruit cherries, apples, or pears are a good choice.Â
On top of the cake I put a nice cinnamon spiced crumb mixture. This consisted of flour, cinnamon, brown sugar, butter, and a touch of salt. I love the sweet and spiced crunch on top of the cake.Â

Ingredients:
- yellow cake mix (or white cake mix if you prefer)
- plain Greek yogurt (or vanilla if you want additional flavor)
- eggs
- salted butter
- lemons (you will be using the zest and juice)
- vanilla extract
- fresh blueberries (or frozen)
- blackberries
Making the cake is simple.  You just combine the ingredients and fold in the berries.  Be gentle about it as you don’t want them to burst before putting them into the pan.Â

Once the cake is in the pan it’s time to make the streusel topping.  To make the topping combine the butter, flour, and light brown sugar in a bowl along with some cinnamon and a pinch of salt and then mash it with a fork until crumbly.  Sprinkle over top of the coffee cake and bake.Â
The coffee cake smelled amazing in the oven. I could smell the sweet blueberries and the spicy cinnamon baking.Â

This coffee cake is delicious!  It has a great crumb, the blueberries and blackberries burst in your mouth, and the sweet and spiced crumble adds a nice flavor and texture to the cake. I served this with a cup of coffee for breakfast and it was perfection.Â

Can I freeze the coffee cake?
You can freeze the coffee cake once baked. I like to cut the coffee cake into individual pieces, wrap each piece in plastic wrap, then place the pieces in a large freezer bag. They will keep for up to 6 months in the freezer.  When ready to enjoy simply remove from the freezer and thaw on the counter. Heat in the microwave for a few seconds if desired.Â
While coffee cake is traditionally eaten for breakfast, we tend to enjoy it as a midday snack or even dessert because it really is a type of cake.Â

For the coffee Cake:
- 1 box 15.25 ounces yellow cake mix
- 1 cup plain or vanilla Greek yogurt
- 4 large eggs
- 4 Tablespoon salted butter melted
- 3 Tablespoons lemon juice
- 1 Tablespoon lemon zest
- 2 teaspoons vanilla extract
- 2 cups blueberries
- 1 cup blackberries
For the Topping:
- 1/2 cup flour
- 1/4 cup oats
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 2 Tablespoons butter softened
Instructions
- Preheat the oven to 350 degrees.
- Spray a 9 x 13 baking dish with cooking spray and set aside.
- In a large bowl combine the cake mix, yogurt, eggs, melted butter, lemon juice, lemon zest, and vanilla extract. Mix well until smooth.
- Add in the blueberries and blackberries and gently fold to combine.
- Pour the mixture into the prepared pan.
- To make the topping combine the flour, oats, brown sugar, and cinnamon in a small bowl. Add the butter in a few pieces and mix until the mixture resembles sand. Sprinkle over top of the coffee cake.
- Bake for 30-35 minutes or until the top has browned and the cake is set.
- Remove from oven and cool completely before cutting into squares and serving.
