Pink Pineapple Vodka Cocktail

This bright Pineapple cocktail is the perfect combination of sweet and tart with a delicious vanilla finish and a fun pink pineapple garnish.

A few weeks ago I got a fun surprise in the mail from Melissa’s Produce…a gorgeous pink pineapple!    As soon as I took out the box I was super excited.   It comes in a pink box with a certificate and everything.

I knew I wanted to make something to showcase the color but I wasn’t sure what to make.  I was thinking about cupcakes or a layer cake but I wasn’t sure that the bright pink color would really stand out in those recipes.

Then I thought about a cocktail.  With a pineapple cocktail I could use the pink pineapple to dress up the rim of the glass and everyone would be able to see it’s color.  This Pink Pineapple Vodka Cocktail is sweet, tart, and refreshing.

Ingredients:

  • Vanilla Vodka
  • Pineapple Juice
  • Lime Juice
  • Grenadine
  • Sugar
  • Pink Pineapple for Garnish

To Make the Cocktail:  Fill two glasses with ice.   In a shaker combine the vanilla vodka, pineapple juice, lime juice, and grenadine.  Shake for 30 seconds then divide between the two glasses.

The cocktail itself is super easy to make.   All the ingredients are poured into a shaker then they are shaken up and poured into a glass.

While you don’t need to do anything to the glass there are several things you can do to make it prettier.   You can rim the glass with coarse sugar or pink sprinkles.

Then there’s the garnish.  While there isn’t ever a need for a garnish it sure does jazz up a cocktail.  I used pink pineapple for the garnish to go along with the pretty pink color.  However, if you forego the grenadine you can add a slice of regular pineapple or ever a lime wheel.

What is a Pink Pineapple?

Pink pineapples are genetically modified pineapples.   They are engineered to produce lower levels of  enzymes that convert the pink pigment lycopene to the yellow pigment beta carotene. Lycopene is the pigment that makes tomatoes red and watermelons pink, so it is common in produce and is safely consumed.

This pineapple is a Pinkglow Pineapple from Del Monte.   While you can sometimes find them in stores I ordered mine from Melissa’s Produce.  This pineapple is sweeter and juicier than traditional pineapples.  It also has hints of candy pineapple throughout.  Plus, the pink color is just gorgeous!

Can I use regular vodka?

You can use regular vodka but if you do I suggest adding a tablespoon of vanilla to the cocktail.  Since vanilla extract is already made in alcohol it will add in the vanilla flavor with a bit more alcohol which will not dilute this cocktail.

How can I sugar the rim of my cocktail glass?

Sugaring the rim is a simple process.  Place a few tablespoons of granulated sugar, coarse sugar, or colored sugar in a shallow bowl.  Wet the rim of your cocktail glass with a piece of pineapple or lime.  Dip the rim of the glass into the sugar in the bowl and lightly twist to evenly rim the glass.   Place the glass upright and allow to dry for 5-10 minutes before filling.

Do I have to add the grenadine?

No you don’t have too.  I simply added it in to give the cocktail a pink hue since I was using the pink pineapple as my garnish.  It also adds just a touch of sweetness to the drink.  If you want to add the color and sweetness but don’t have grenadine you can add a teaspoon of maraschino cherry juice in the cocktail as well.

I love the flavor of this cocktail.  It’s so bright and fruity.   The pineapple adds a sweetness to the cocktail while the lime juice gives it a tartness.   Then the vanilla in the vodka adds a whole other dimension to this drink.

Ingredients

  • 6 oz. vanilla vodka
  • 6 oz. pineapple juice
  • 2 oz. lime juice
  • 1 oz. grenadine
  • 2 Tablespoons coarse sugar
  • 4 slices pink pineapple

Instructions

  • Pour the sugar into a shallow dish.
  • Take a slice of pineapple and run it along the edge of both glasses.
  • Dip the glasses into the sugar in the bowl to line the rim. Fill each glass with ice and set aside.
  • Pour the vodka, pineapple juice, lime juice, and grenadine into a shaker with ice. Shake for 30 seconds.
  • Divide the cocktail between the two glasses.
  • Garnish each cocktail with 2 slices of pink pineapple.
